WFMW: Boston Cream Pie






As promised, here is yet another of my favorite recipes for the holidays!


I can't for the life of me remember where I got this recipe, but I have modified it to suit my needs and for easier prep.

I usually serve this for Christmas day dessert, but the recipe makes 2, so you could use the other one to take to another gathering if you wanted.

Boston Creme Pie
Cake:

1 Yellow Cake Mix

1 Small box Instant Vanilla Pudding

Prepare pudding as directed for pie filling. Chill thoroughly.

Prepare cake as suggested on box for 2 round layers; cool completely.

With a long bread knife, cut each layer horizontally to make 2 flat halves together (like a hamburger bun).

Make a well in the center of the bottom half of each layer by pressing the cake with your fingers to within 1/2 inch of the sides all the way around. Fill each well with half of the prepared pudding; place top layer on each half.




Glaze:

3 Tablespoons Butter

3 oz. Unsweetened Baking Chocolate (OR 9T cocoa mixed with 3T oil or melted shortening)

1 C. Powdered Sugar

3/4 teaspoon Vanilla Extract

Water

Melt butter & chocolate together in a small saucepan; remove from heat. Stir in sugar and vanilla. Mix well (mixture will be stiff). Stir in water 1 tsp. at a time until smooth and spreadable.
Spoon glaze over the top of each cake. You can let it drip down the sides or smooth it over them if you wish. Smooth the tops also. Refrigerate for about 30 minutes or until glaze sets and serve or cover and store in refrigerator.




TIPS: Do not attempt to make the glaze ahead of time and work with it quickly to avoid it getting grainy-looking.

This is a great dish to make ahead a day or so because the pudding sets up better as it sits.

Make your cakes ahead and freeze them to make for quicker prep the next time!



MERRILY WE ROLL ALONG
Well, Christmas prep is taking over the household! We are in full ELF mode here, wrapping, writing things down so we don't forget (although, "Where did I put that piece of paper" has become my new phrase of choice), baking and planning. Maybe Santa will leave me a vacation under the tree!

We went and visited a local house that has a 90 foot long porch full of animated Christmas scenes along with several separate scenes set up beside the house's walkway. The boys were first in line to see Santa when he came out of the house! Boy was I glad! It was colder than sin out there! WOO!

Then, after the boys were nestled all snug in their beds, or so I thought, Steven could wait no longer. He had brought a gift home from preschool for DH and I and the suspense was KILLING HIM! He came flying down the hallway like a shot, dove under the tree like a field mouse running from the plow and waved it in front of DH and I. He had the HUGEST grin and said, "Don't you want to open this?"

How could we resist?!?! He said it was a decoration he made for Christmas, so we figured we'd better open it so we could set it out and show everyone at Christmas.

It is the most adorable Advent wreath I've ever seen in my life!




It has 3 purple birthday candles, one pink birthday candle and a tiny white votive and it came with a little guide to lighting it and the meaning of each candle. He was so proud of it as he should be! I can tell now that this will be one of those items I'll cherish forever!



I still have a ton of cleaning to do for this weekend, but with my kids and the little ones I babysit, I don't take the cleaning too seriously until the day or two before any event. I am keeping up on the laundry and the dusting for now and I also wiped down a bunch of stuff in my mud room. while I had a clean, wet rag this morning. THAT felt better!
