Make It From Scratch: Oatmeal Cookies

A few weeks ago, Vicki sent me the most wonderful Cinnamon Oatmeal Raisin Cookies! They were SO YUMMY that I have been dreaming of them ever since.

When I asked if she'd be willing to share the recipe, she told me that she found it on the back of the package of Hershey's Cinnamon Chips! Friday, I shopped, I found the chips and I bought the rest of the ingredients I didn't have at the house.

Saturday (Yes, it took me a full 24 hours), I could stand the wait no longer and I made them. They are SO EASY!

Oatmeal Cinnamon Chip Cookies
1 C butter or margarine, softened


1 C packed light brown sugar


2 eggs


1.5 tsp. vanilla extract


1.5 C flour


1 tsp. baking soda


2.5 C quick oats
1-2/3 C (10 oz) Hershey's Cinnamon Chips

3.4 C raisins
Heat oven to 350 degrees.

Cream butter and sugars together. Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture beating well. Stir in oats, cinnamon chips and raisins (batter will be stiff)

Drop by heaping teaspoons onto ungreased cookie sheet. Bake 10-12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheet to cooling rack.



Makes about 4 dozen.




My first batch of these was a little too soft and flat. I did have to add a little more flour, but I don't know if I maybe mis-measured the first time, or if it was the fact that I used margarine rather than butter. I only added a scant 1/4 cup and they turned out nice and fluffy.




I ran into another snafu while making these... my stand mixer would not work. I've had it since I got married and I am really bummed. I also wish I had known this a couple of days ago, I could have gotten a Kitchen Aid stand mixer for a great price. I actually looked at them, but decided that the one I have is good enough and I could wait until it quit before I bought another one.

I also made a batch of chocolate chip cookies since Mike doesn't like raisins. I'll have to make him a batch of the oatmeal cookies without raisins next time.

I forgot to tell you. Don't eat the batter. LOL It's so good it hurts.

I'm going to throw some cin chips in my cart tonight at the grocery store. You've made me hungry for them

How could you do this to me during my diet! Anything cinnamon makes my mouth water. I never knew that they made cinn chips. Now I know!

I'm totally going to try these. I bought lots of oatmeal with the expressed purpose of making oatmeal cookies a couple months ago... and I've just been using it for plain ol' oatmeal since then. No cookies yet. This'll give me an excuse, they look delicious.

could you please explain "quick oats" and "cinnamon chips"?
i mean i know what cinnamon is, but never saw c. chips here in austria.

Midwife- Quick oats are sometimes called quick cooking oats. I believe they are just more processed than old-fashioned oats and therefore, cook faster. I actually used the old fashioned ones when I made these, but the recipe calls for the quick oats. I think they turned out equally well.

Sorry, I forgot about the cinnamon chips.
Cinnamon chips are just like chocolate, but are made from cinnamon instead. The ones I bought were the Hershey's brand. I'm not sure if the are available in Austria or not. Let me know if you are able to find them.

as for the cinnamon chips: somewhere in my city there has to be a supermarket which sells american food items; i'll find out.
(and if not, i'm privileged to have a cousin in seattle who sends me christmas gifts every year... ;-)
